Song Bird is our most ambitious range — single-variety ciders aged in wine barrels to create something that sits at the intersection of cider and fine wine. Song Bird No.3 starts with our beloved Egremont Russet, wild-fermented to dryness, then aged in both Chardonnay and Priorat wine barrels.

The result is something extraordinary — a cider of genuine vinous complexity that deserves to be drunk with the same attention you'd give a great natural wine.

Tasting notes

Deep amber with a faint golden rim. The nose is rich and complex: toasted almond, vanilla, dried stone fruit, and a hint of Priorat's characteristic mineral earthiness. On the palate it's full-bodied and structured, with layers of nutty Russet fruit, spice, and gentle wood tannin. The finish is extraordinarily long — warm, complex and deeply satisfying.

About the barrels

We sourced both Chardonnay and Priorat barrels to give different dimensions — the Chardonnay adds a creamy, toasty character while the Priorat brings structure, earth and a vinous depth. Both barrels were previously used, so they contribute flavour without overwhelming the apple.

Food pairings

A special bottle deserves special food. Serve with aged hard cheeses, roasted game, duck confit, or a rich mushroom and truffle dish. Also wonderful after dinner on its own, like a fine Calvados.
