Two Birds is a two-part collaboration with Chapel Cider — two bottles, two expressions of the same blend, one still and one sparkling. Part 1 is the still expression: calm, contemplative and allowing every detail of the Dabinett and Redlove to show without distraction.
Dabinett is a classic English bittersweet cider apple, and here it meets Redlove's berry character and crimson flesh for something beautiful.
Tasting notes
Deep amber-rose in the glass, still and clear. On the nose: ripe orchard fruit, dried cherry, a hint of bitterness and Dabinett's characteristic farmyard warmth. The palate is rich and structured, with good tannin, red berry fruit and a long, dry, complex finish.
About the collaboration
Chapel Cider are one of the most exciting producers working in the UK today. We've long admired their rigour and creativity — this collaboration gave us the chance to explore what our two orchards could make together.
Food pairings
Outstanding with game, duck, aged hard cheeses or a rich autumn stew. Serve at cellar temperature in a wine glass.
