Two Birds Part 2 is the sparkling counterpart to Part 1 — the same Dabinett and Redlove blend, but bottle-conditioned and given time to develop a natural effervescence in the bottle. The fizz transforms everything: brightening the fruit, lifting the aromatics, and adding a textural dimension that makes this something else entirely.
Tasting notes
Rose-amber in the glass with a fine, creamy natural fizz. The nose is expressive and lively — dried cherry, apple blossom, spice and a hint of wild funk. The palate is complex and layered: Dabinett's tannin structure balanced by Redlove's berry freshness, with a long, evolving finish that rewards patience.
About the collaboration
Made in collaboration with Chapel Cider, using fruit from both orchards. The bottle-conditioning was handled with the same care and attention we give to all our Fledgling and Song Bird releases.
Serving suggestion
Chill gently, handle with care and open slowly. Decant if you have time. Excellent with game, duck breast, aged cheese or on its own as a special occasion drink.
